
Vegetable Fried Rice is one of my mom’s favorite dishes from my cooking. My mom is a picky eater and its very hard to please her. I don’t use any soy sauce or store brought sauces in these recipes. I make the hot sauce by grinding red chilies and garlic to use in fried rice.
If you are looking for a recipe to include loads of veggies this is the perfect recipe. You can use any vegetables which are available to use, but if you are like me who like colorful plate then you can choose different colored vegetables. My choice of vegetables is carrot, beans, cabbage, cauliflower, broccoli, and red bell pepper. I like to use brown rice for fried rice as I like the texture of brown rice than white rice. But you can definitely use white rice as well. The key to this recipe is to use perfectly cooked rice cooked without being mushy.
This is a great recipe for meal prep as well. You can double or triple the recipe and store it in a glass container. You can reheat recipe in oven or steam in the instant pot. If you would like to add protein to the recipe, you can do by adding fried eggs to the recipe or add grilled chicken or grilled paneer on the side.
Ingredients:
- Oil- 1 TableSpoon
- Red Chillies- 2 chilies
- Garlic- 2 or 3 pods
- Cloves- 3
- Cinnamon stick – 1 small piece
- Bay leaf- 1
- Onion- 1 small size
- Diced Carrot- 1 cup
- Diced Green Beans- 1 cup
- Diced Cabbage- 1 cup
- Cooked Brown rice- 1 cup
- Pepper- 1 TeaSpoon
- Salt – 1 TeaSpoon
- Spring Onion- 1 Stalk
- Chopped Cilantro leaves- 1/4 cup
Steps:
- Grind Red chilies and Garlic to make a paste consistency.
- Heat a heavy bottom pan or cast iron and add oil.
- Add Cloves, Cinnamon stick, Bay Leaf.
- Add Red Chillies and Garlic paste and stir well.
- Now add chopped onions and mix.
- Once the onion is sautéed well, add carrot and beans.
- When carrot and beans cooked 3/4th now add cabbage.
- Add salt and allow the vegetables to cook,
- Once vegetables are cooked well, add rice and stir well.
- Lastly add pepper, spring onion, and cilantro leaves and mix well.
Now enjoy vegetable fried rice!
