Home Made Noodles

Who doesn’t love Noodles right? While growing up, my mother would make Maggi noodles once in 6 months and I used to wait for those days. I generally eat my meals fast but the day we have noodles, I would be the last one to finish as I enjoy each bite. Once I learned about the ingredients that go into Maggi noodles, I stopped eating. As an experiment, I was trying to make noodles using wheat flour and it turned out delicious and my family loves it.

Ingredients:

Dough:

  • Wheat flour – 2 cups
  • Oil- 1 Tbl Spoon
  • Salt

Vegetable Noodles:

  • Oil- Tbl Spoon
  • Cinnamon stick – 2 small pieces
  • Cloves- 4 pieces
  • Onion sliced lengthwise- 1 cup
  • Green chilies- 2 numbers
  • Curry leaves- 1 strand
  • Carrot julienne cut – 1 cup
  • Green beans Fresh cut – 1 cup
  • Cabbage – 1 cup
  • Red and Orange Bell Pepper- 1 cup
  • Red chili powder- 1 Teaspoon
  • Coriander Powder- 2 Teaspoon
  • Garam malasa – 1 Teaspoon
  • Salt
  • Cilantro for garnishing

Steps to make Noodles:

  • In a mixing bowl, add wheat flour, oil, and salt.
  • Mix the dry ingredients well
  • Now add water slowly and make the dough to a chapati dough consistency.
  • Let it rest for 30 to 60 mins.
  • In a large pot, add one quart of water and bring it to boil.
  • On countertop or surface dust dry flour.
  • Take murukku maker along with plate which has big round circles.
  • Add dough inside murukku maker and spin. This is the hard part:)
  • As you spin, keep dusting the noodles with dry flour
  • Now add the noodles in hot water.
  • Let it cook for 6-7 mins.
  • Once cooked, drained the hot water and run through cold water a couple of times to remove the excess starch from noodles. Yay, Noodles is ready:)

Let’s make vegetable noodles!!

  1. In a cast-iron pan, once its hot add oil.
  2. Add cinnamon sticks, cloves
  3. Add onions and saute for a minute or two.
  4. Now add carrots, green beans, and cook till it’s tender.
  5. Add cabbage and bell pepper and saute.
  6. Once vegetables are added, now add red chili powder, coriander powder, garam masala, salt.
  7. Cook till the raw smell of spices is gone.
  8. Now add cooked noodles and use a fork to mix it with vegetables
  9. Add coriander leaves before serving.

Now serve noodles hot with your favorite ketchup.
