
I like to make a special breakfast on Friday as a pat on my back to celebrate the last day of the work week. It’s still a working day so, I wanted to make something quick. Of course, it has to keep me full for longer and doesn’t raise my sugar rush.
I tried just mashed ripened banana and eggs but I did not like the consistency of the pancake. Also, it was harder to flip and harder to make pancake size. But if you are following no-carb diet then you can try only banana and egg pancake. You want to make sure, you are using ripened bananas as it gives the sweetness to the pancake. I add rolled oats flour to the banana, egg mixture and that makes a great pancake. You can use oats flour but I don’t buy oats flour separately so I just blend rolled oats and make flour. Oats is also high in fiber which keeps you full for longer without feeling heavy.
Cinnamon and Vanilla adds fantastic flavor to the pancake and Friday vibe at our house. Adding baking powder to the mixture acts as a leavening agent and give a fluffy pancake. I make the pancake in a cast iron pan as it distributes the heat evenly. Once you try this pancake you never go back to the original pancake.
Ingredients:
- Ripened Banana – 2 medium size
- Eggs- 2
- Vanilla Extract – 1 Teaspoon
- Rolled Oats – 1 cup
- Salt – 1/4 Teaspoon
- Baking Powder- 1 Teaspoon
- Cinnamon Powder – 1/4 Teaspoon
- Ghee or Clarified Butter – 1 Teaspoon
Steps:
- In a mixing bowl, mash the bananas. If you like to have chunky banana pieces, you can leave some pieces but I like them to be completely mashed
- Add eggs and vanilla extract to the bananas and mix well
- Blend the rolled oats to flour
- Now mix salt, baking powder, cinnamon powder to the rolled oats flour and mix well
- Add the dry ingredients to wet ingredients along with ghee and mix well
- Heat the cast iron pan in medium flame
- Once the pan is hot, pour the batter. I use the ice-cream scooper to make one pancake.
- After 30 seconds, carefully flip it the pancake to the other side
- Now let it cook for another 30 seconds
Now, the pancake is ready. You can enjoy the pancake as it is since the Banana gives the sweetness you need or you can have with maple syrup!
