
Horse Gram chutney with rice is a staple in many South Indian households. While growing up, my mom makes this chutney when she is tired as this is easy to make and I do the same these days. If anyone in the family gets cold, we will make this chutney with rasam as that gives immediate temporary relief. Horse gram chutney generates heat in your body which is also good to be eaten during winter days. Horse Gram is rich in protein and antioxidants pulse which keeps you full for longer days. This pulse got this name as horse gram because it was used to feed racehorses.
To cook horse gram it doesn’t need to be soaked and can be cooked directly as a dried pulse. I generally cook in the instant pot in manual mode for 15 mins but it can be cooked in the stove top as well. Once it’s cooked, sauté cumin seeds, garlic, red chilies and onions along with cooked horse gram. Traditionally shallots or small onions are used but I use regular onions in the recipe. Then grind the sautéd horse gram into chutney consistent and finally add couple of tablespoons of raw onion and pulse it. Raw onion gives nice crunch to the chutney and now serve with rice and ghee. To make this dish vegan, don’t add ghee.
Ingredients:
- Horse gram – 1 cup
- Water – 2.5 cups
- Oil – 1 Teaspoon
- Cumin – 1 Teaspoon
- BlackPepper – 1 Teaspoon
- Garlic – 5 cloves
- Red Chillies – 3
- Turmeric – 1 Teaspoon
- Onion chopped – 1 medium size
- Salt – 11/2 Teaspoon
Steps:
- Cook the horse gram in the instant pot for 15 mins in manual mode or cook in stove top until its cooked. Water ratio is 1:2.5 ( One : Two and a half)
- Once cooked drain the water. Save the water as it can be used while grinding if water is required.
- In a pan, add oil. Once oil is hot, add cumin seeds, black pepper, red chilies, garlic and 3/4th of chopped onion and sauté well
- Now add cooked horse gram, salt and sauté it
- Once the mixture is cooled, grind to chutney consistency. If required add the saved water while grinding.
- Add the remaining raw onions and pulse it few times.
Serve it with hot rice and ghee!
