Banana Blueberry Muffin

If you are looking for weekdays quick breakfast on the go then Banana Blueberry Muffin is your go-to recipe. You can make this over the weekend during your meal prep and you are all set for weekdays. Usually for me, I crave for snacks around 3pm and this muffin is perfect for me along with a cup of tea. My sweet cravings get curbed as well and I won’t reach for any sugary stuff at night. This muffing is a balance of protein, fat and antioxidants to keep you full for a longer period of time.

This muffin is made out of staple pantry ingredients which doesn’t require any fancy ingredients. You don’t need a blender or stand mixer. All you need is a mixing bowl and whisk to make this recipe.

We use ripened bananas acts as a natural sweetener for this recipe. I would say only mashing banana is the only work making this recipe. Once you mash the banana, add eggs and mix well. Add almond flour and baking soda to the wet ingredients and mix well. Now add blueberries and divide into equal 10 portions of muffin and bake it. You can make this muffin just in 30 minutes including 20 minutes of baking time.

You can add any fruits instead of blueberries. I sometimes add chopped apples instead of blueberries and absolutely tastes delicious. This makes great snack for kids lunch box as well. My older son who is a picky eater just loves this muffin.

Ingredients:

  • Ripened Banana – 2 or mashed 1 cup
  • Eggs – 2
  • Almond Flour – 11/2 cups
  • Baking Soda – 3/4 Teaspoon
  • Butter (optional) – 1 Tablespoon
  • Blueberry – 1/2 cup
  • Vanila extract – 1 Teaspoon

Steps:

  1. Preheat the over for 350 degrees Fahrenheit
  2. In a mixing bowl, mash banana. If you like chunky banana pieces then you can leave some pieces
  3. Once bananas are mashed well, add eggs, melted butter and mix well
  4. In a separate bowl, add almond flour, baking soda and mix well
  5. Now pour the almond flour mixture into wet ingredients and mix well
  6. Add Vanilla extract and Blueberry and combine well
  7. Place 10 muffin paper cups in muffin pan
  8. Using ice-cream scooper or spoon, divide the muffin mixture into 10 and pour in muffin cup
  9. Bake if for 18 -20 minutes
  10. Take it out from baking pan and let it cool down

Now enjoy a warm banana blueberry muffin.

Storage instructions:

Once muffins are cooled down completely, store in an airtight container in the fridge up to 1 week. You can serve chilled or you can microwave for 20 seconds if you like a warm muffin.
